According to Epiphanius, Bishop of Cyprus, Matthew the Evangelist was martyred in Hierapolis, and the Matthew who replaced Judas Iscariot among the twelve apostles is the one who died in Ethiopia.
Matthew the Evangelist (מתי "Gift of the LORD", Standard Hebrew and Tiberian Hebrew Mattay; Septuagint Greek Ματθαιος, Matthaios) is traditionally believed to be the author of the Gospel of Matthew.
Some traditions say that Matthew was martyred in Ethiopia, others say that he was martyred in Hierapolis of Parthia.

The Latin Church celebrates the feast of St. Matthew on 21 September, and the Greek Church on 16 November.
When summoned by Jesus, Matthew arose and followed Him and tendered Him a feast in his house, where tax-gatherers and sinners sat at table with Christ and His disciples.

Matthew's group saw Jesus as bringing about a renewed and fulfilled Israel, including the gentiles, who would become incorporated into Israel through faith in Jesus, by baptism and the full observance of the Torah as interpreted by Jesus, God's living Wisdom forever present to the community of faith.
Matthew was written a good twenty to thirty years after Paul's letters, and indeed when Matthew presents Jesus saying, “whoever breaks one of the least of these commandments, and teaches others to do the same,” I can't but wonder if he has Paul and followers of Paul in mind.
Matthew remained as a monument to what might have been, a minority report, and has proved to be an extraordinary mine of Jewish-Christian wisdom on which the church has drawn through the ages, even if not interpreted exactly as Matthew intended.

The winged man is the symbol of St. Matthew because he begins his gospel by tracing the human descent of our Lord.
The symbols most frequently met with are the four-winged ceratures mentioned in the Book of Ezekiel, as well as in the fourth chapter of Revelation, namely the winged man, lion, calf and eagle.
