Latin Rite, in the singular and accompanied, in English, by the definite article ("The Latin Rite"), is a term by which documents of the Catholic Church designate the particular_Church, distinct from the Eastern_Rite Churches, that developed in western Europe and northern Africa, where Latin was the language of education and culture.
For instance, ordination to priesthood (but not to the order of bishop) may be conferred on married men, and Eastern patriarchal and major archiepiscopal Churches elect bishops for their own territory (though not outside it).
The Eastern-Rite Churches differ, to varying extents, from the Latin Church in these respects.

 The Indult Tridentine Rite of Mass
Note well: the abandonment of Latin and Gregorian chant were not mandated by the bishops (and most certainly not by the Council), yet it was tolerated in most places.
It is not for love of Latin that Catholics believe this; if you read the prayers of the old Mass, they are more heartfelt and leave absolutely no doubt about the sacrificial nature of the Mass.
The main difference between these two events and the one that is happening in modern times is this: the first events were done by enemies of the Church; the latter event is being done by those who are supposed to be friends of the Church.

According to the Movement of Married Catholic Priests (MPC), the number of married priests in the world has risen to 100,000 although that figure is only an estimate because the Catholic hierarchy "hides the numbers," and many married priests are unwilling to come forward.
Priests of some Eastern Rites are allowed to marry, and some married Anglican priests are allowed to become Catholic priests after conversion.
Latin-rite Catholic priests are sometimes dispensed from their vow of celibacy in order to marry, but they are then banned from exercising their priestly faculties, except in the direst emergencies, such as the Last Rites.

Also in the Eastern Catholic Church there are Churches or Rites I believe with two different Liturgies in the same Church/Rite.
My current understanding is that, on the Catholic Church world, a Rite is associated with a Church.
Curiously, I have become acquainted over the years with a number of Indian Catholic priests (of both Rites) in the United States, one of whom is now a Bishop in India.

The distinction between High and Low mass was removed, as were many repetitions, ritual gestures, and the requirement that the priest say has "his" prayers also said by the people and choir.

Christ did call only male apostles; and the Church upheld this practice and has doctrinally defended it, as it has not with the other possible analogies you posit (The failure of Christ to call any black apostles, for example, was not considered a bar to ordination by the Church or given any doctinal significance).
The iconic value of celibacy is not essential but has been valued right from the beginning in the entire Church and, as you pointed out, has been the norm in the Latin Church for 1000 years.
Does the Latin Rite cross-reference this Icon of Christ argument with the Eastern practice, which has always been a married dicaconate and priesthood, unmarried episcopate?
